Stewed Fish and Boiled White Yam.

STEWED CHICKEN

Ingredients:

Note: The ingredients are use to marinate the chicken and to make gravy.

½ of a whole Chicken (cut to parts, do not debone)

1 stack of Scallion (diced)

1 medium Onion (diced)

2 small Tomatoes (diced)

4 Garlic Cloves (mashed)

¼ of Sweet Pepper “Bell Pepper” (diced)

½ ripe Pepper (scotch bonnet or real pepper)

Ginger (cut to half the size of your thumb)

1½ tablespoons of Sea Salt

1 tablespoon of Parsley (dried or fresh)

1 tablespoon of Basil (dried or fresh)

½ teaspoon of Pimento Berries (dried)

1 teaspoon Thyme (fresh pieces tie together the size of one finger)

1 ½ tablespoons White Vinegar

½ cup Coconut Oil (or Olive oil) (after fry remove half)

2 cups Water (more gravy is best)

3 tablespoons Ketchup
